I remember eating Homemade Canned Pork made by my Grandma Emilka in our old house. Jars with this delicious meat was stored in a basement where was a pantry with canned food: fermented cucumbers, sauerkraut, red peppers, homemade tomato sauce, canned beets, forest mushrooms in vinegar, jams, fruit compotes and ‘mięso w słoiku’ – a rare delicacy for special occasions:)

Polish Bigos (Hunter’s Stew) is one of the most known Polish dishes. It’s pronounced: [ˈbʲiɡɔs]. Each family has it’s own recipe for bigos and each bigos is different, but the core is sauerkraut or/and fresh shredded cabbage and various kinds of chopped meats. You can use meats you like or which have left in the fridge. Yes, this is a great way to get rid of leftovers:) The more kinds of meats you use, the richer the taste, just follow your likes.
You need to stew all the ingredients for couple of hours. Some cooks are making bigos for 3 days, each day stewing again and cooling, so that bigos’ flavors combine and give the best taste:) People in Poland say that the more times you warm up bigos, the better it tastes.
Kartacze – Polish Potato Dumplings are made of raw potatoes with small (or non) addition of cooked ones. They are regional dish in Podlasie – North- Western part of Poland. Go to Białystok to try the best Kartacze ever:) Or make them yourself:)
In my family house we called them Kołduny, so the naming may vary:) My Grandma and Mum were born and raised on the present territory of Belarus, but back then it was Poland, language and cuisines mixed. Kartacze can also be called Cepeliny (dish with Lithuanian origins).

Polish Leczo is a vegetables stew with Polish pork sausage. It is a dish with Hungarian origins. You cook seasonal, use red peppers, tomatoes and zucchini the moment they are the best and the cheapest. You can cook a big pot of food for a family of 6 for a week:)
In Poland Leczo started to be popular in hard times of PRL, when there was shortage of everything in stores. There was also time when garden plots where very popular, Poles where growing their own carrots, tomatoes, parsley, cucumbers, peppers. Totally bio and eco:)
Yesterday I cooked Polish Pork Stew with Kluski Śląskie. Silesian Potato dumplings are on the official list of traditional food of Silesian voivodeship. They are easy to prepare and delicious. A pork stew with sauce will make the serving complete, as the sauce is gathering in a dumpling’s hollows and stores the taste:)
Upper Silesia is located at the South of Poland and usually is associated with coal mining. There are many industrial cities, that eventually grew up into a big metropolis. Silesian dialect is hard to understand by other Polish people, that there are debates to recognize it as a different language. l invite you to try Silesian cuisine.
Smalczyk – Polish pork lard with cracklings is made of pork fat, you need to agree: it is not healthy. But as the fat carries a flavor – it is also goood:) Tastes best on rye bread with pickled cucumbers. Yummy.
In Poland lard is served in restaurants with polish traditional food, as a pre-starter. It is something that you get free once you place an order and wait for your food. This Smalczyk is posh and exclusive;)
However the origins of it are not so rosy. In the past people in Polish countryside were poor. When they have a pig killed, they used all the single part of it. A lard made of fat was high caloric bread spread, that gave energy for the whole day of hard work.
Young cabbage is sweet and delicate, it is cooking fast. It is not likely to give a stomach problems as may an old cabbage, stewed for hours. In case of young cabbage soup I minimize the seasoning, just to keep the taste natural. Try Young Cabbage Soup cooked on pork bones.
For broth I used pork bones, which are really cheap. You can also buy pork chop with bone, use pork chop for Breaded pork cutlets and use bones for the soup. I remember my Grandma was using bones for soups, the reason were savings and her approach- not to throw away any food and have respect for food.
Traditionally ‘Zasmażka’ can be added to the soup to make it thicker and reach.
Polish Kotlety Mielone could be called meat balls, but in Poland we make them more oval and flat compared to a ball:) Some may call them Polish hamburgers, but we usually made them with pork while I associate hamburgers mainly with beef.
In Polish cuisine they are a staple for family dinner, specially with children. I sometimes add shredded carrot to them, so that my kids ate more vegetables;)
Last weekend me and my husband Robert decided to prepare a full 2 course meal for our family of 4. Traditional and standard;) Polish dinner on Sunday is a rich broth and Kotlety schabowe: Polish breaded pork cutlets. They can be compared to Austrian Wiener Schnitzel, but does not have to be prepared from veal.
We went to the local market where you can get vegetables and meat directly from farmers.
