Baked Ham with Grey Sauce

Juicy Baked Ham with Grey Sauce is a traditional dish in Polish cuisine. In Poland we prepare it for special occasions, especially for various holidays, like Christmas and Easter. We most often serve it warm as a main course. When there’s a piece of ham left, we serve it as cold cuts on sandwiches. Gray Sauce is a simple old Polish sauce, particularly suitable for both ham and Kluski Śląskie. The whole dish is mostly associated with Silesian and Grater Poland’s regional cuisine. Baked Ham with Grey Sauce and Kluski Śląskie
Ingredients
  • 1- 1 and half kilogram ham
Brine:
  • 4 cloves of garlic
  • 1 onion
  • 4 bay leaves
  • 5 grains of allspice
  • 8 grains of black pepper
  • 4 tablespoons of salt
Marinade:
  • 2 tablespoons of mild mustard
  • 3 tablespoons honey
  • 4 cloves of garlic
  • 4 tablespoons of vegetable oil
  • 2 tablespoons of dried marjoram
  • salt, pepper
Grey Sauce:
  • 2 tablespoons butter
  • 1 and half tablespoons flour
  • 2 cups beef stock
  • 2 tablespoons vinegar
  • salt and pepper

Wash and dry the raw ham. Prepare the brine in a pot: add salt, garlic, diced onion, allspice, black pepper, and bay leaves to 2 liters of water. Mix. Place the meat in it. The brine should cover the meat. Put it in the fridge overnight or longer, if you have time. The next day, take out the meat and rub it with the marinade made from grated garlic, honey, mustard, marjoram, salt, and pepper.

Put the ham in an ovenproof dish and place it in an oven preheated to 180 degrees Celsius (approximately 350 degrees Fahrenheit) for about 1.5 – 2 hours, depending on the ham size. Place a dish with water in the oven as well, so that the ham doesn’t dry out and remains juicy.

Prepare the Gray Sauce. In a saucepan, melt 2 tablespoons of butter, then add 1.5 tablespoons of flour. Stir and sauté for 2 minutes to make a roux. Then slowly pour in 2 cups of beef broth into the roux. Whisk constantly to prevent lumps from forming. Season with salt and pepper. At the end add 2 tablespoons of vinegar. If the sauce is too thick, add more broth or a little hot water.
