Crunchy Cauliflower Salad
Ingredients
  • 1 small cauliflower, divided into florets
  • 1 carrot, grated on a coarse grater
  • 1 small onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • salt and pepper to taste
Preparation
  1. Divide the cauliflower into florets, wash carefully and grate on a coarse grater.
  2. Peel the carrot, wash it and grate on a coarse grater.
  3. Finally chop one small onion. You may use a regular onion or a shallot.
  4. In a large bowl, combine grated cauliflower and carrot, chopped onion, and chopped parsley.
  5. In a small bowl, mix together the mayonnaise, sour cream, lemon juice, and honey. Season with salt and pepper to taste.
  6. Pour the dressing over the vegetables and mix well to ensure all ingredients are evenly coated.
  7. Refrigerate the Crunchy Cauliflower Salad for at least 30 minutes to allow the flavors to meld.
  8. Before serving, give the salad another stir and check if it needs additional salt or pepper.
