In Poland, beetroot is a beloved ingredient that features in many traditional dishes. From classic Beetroot Barszcz to tangy beetroot salads like Ćwikła, beet holds a special place in Polish culinary culture. Today, I’m happy to share with you a refreshing Raw Beet Salad recipe, that celebrates the flavors of raw beetroot, carrots, apples, and red onions, all brought together in a creamy mayonnaise-yogurt sauce with a zesty twist of lemon juice. Actually I discovered this salad recently and I was really surprised that you can use raw beetroot in a salad. In addition and it’s really important, this raw beetroot salad, unlike dishes made with cooked beets, has a low glycemic index, making it beneficial for individuals with diabetes.
Ingredients:
- 3 medium beets, peeled and grated
- 1 carrot, peeled and grated
- 1 apple, peeled and grated
- 1/2 red onion, finely chopped
- 2 tablespoons grated horseradish
- 1/4 cup mayonnaise
- 1/2 cup plain yogurt
- juice of half lemon
- salt and pepper to taste
Instructions:
In a large bowl, mix together the grated beets, carrots, apple, and red onion.
In a small bowl, combine the grated horseradish, mayonnaise, plain yogurt, and lemon juice until well combined. Season the sauce with salt and pepper to taste.
Pour the prepared mayonnaise-yogurt sauce over the vegetables in the bowl and mix well until all the ingredients are evenly coated with the sauce.
Chill the salad in the refrigerator for about 30 minutes before serving to allow the flavors to meld together.
Before serving, you can garnish the salad with chopped parsley or chives for decoration.
This Raw Beet Salad can be stored in the refrigerator for several days.
