Łężnie Potato Cutlets

Łężnie – Bieszczadzkie kotlety ziemniaczane z kapustą kiszoną

Łężnie Potato Cutlets with sauerkraut have their origins in old Lemko cuisine, which was prevalent in the Bieszczady area of Poland before World War II. Although they were displaced during the war, remnants of their culinary heritage can still be found in the region, including dishes like Fuczki or Łężnie. These potato patties with tangy cabbage filling, topped with mushroom sauce, are a delicious and hearty dinner dish.

If you have cooked potatoes left from yesterday, this is a way to use them up. If you are vegetarian or fasting, this is a piece of cooking for you:)

Ingredients
  • 4 large potatoes, boiled and peeled
  • 1 onion, finely chopped
  • 1 tablespoon flour
  • 1 teaspoon salt
  • half teaspoon pepper
  • 3 handfuls sauerkraut, drained and finely chopped
  • vegetable oil for frying
  • 1 tablespoon butter
  • breadcrumbs for coating

In a bowl, mash the boiled potatoes until smooth. Saute chopped onion in butter.

Add onions,flour, salt, pepper and finely chopped sauerkraut to the mashed potatoes. Mix all the ingredients well until thoroughly combined.

Form flat patties from the potato mixture. Coat them in breadcrumbs.

Heat vegetable oil in a large skillet. Fry the patties until golden brown on both sides, until they become crispy on the outside.

Once the patties are cooked, drain them on paper towels to remove excess oil.

Serve Łężnie Potato Cutlets with favorite Polish salad. They’re great with Mushroom Sauce too.
