Pierogi are a beloved and iconic dish in Polish cuisine, that have been cherished for generations. This time I invite you to try Pierogi with Meat. Ingredients
- 3 cups all-purpose flour
- 1 cup warm water
- 1 large egg
- 1/2 teaspoon salt
- 2-3 cups cooked meat from Rosół (chicken, pork, or beef or a mix)
- 1 large onion
- 1 stale roll diced and soaked in milk
- 2 tablespoons butter
- 2 cloves garlic, minced
- salt and pepper to taste
Pierogi dough preparation
Combine the flour and salt in a large bowl. Make a well in the center and add the egg. Gradually add the warm water while stirring, and knead the mixture until a smooth, elastic dough forms. You can use an electric mixer with a hook for a smooth effortless operation. Cover the dough with a cling foil and let it rest for the time of meat preparation.
Meat filling preparation
Saute diced onion and minced garlic in butter. Ground meat in a meat grinder. Grind also soaked bread roll and sauteed onion and garlic. Combine all well in a bowl. season with salt and pepper. Mind that meat cooked in Rosół has already been salted and seasoned. Anyway the filling can’t be bland.
Assembling the Pierogi
Roll out the dough on a floured surface to about 1/8-inch thickness. Use a round cutter or a glass to cut out circles. Place a spoonful of the cooked meat filling in the center of each dough circle and stick the dough edges, forming a half-moon shape. You can use a fork to crimp the edges for a decorative touch.
Place Pierogi on a tray sprinkled with flour, so that they did not stick. Cover with kitchen cloth.
Bring water to boil in a large pot. Place a batch of Pierogi to the boiling water, stir so that they didn’t stick to each other. Let them go up to the surface and simmer for 1 minute. Remove the Pierogi with a slotted spoon and transfer them to a plate.
Pierogi with Meat serving
- melt butter or heat oil over medium heat. Sauté the boiled pierogi until they develop a golden-brown crust on both sides, or:
- saute onions in butter and sprinkle over cooked Pierogi with Meat and serve hot.
