Easter Horseradish and Eggs Relish is a delicious spread, that is prepared in many Polish families for Easter. I believe when you tried it once you’d be making it on a regular basis. It’s easy to make and requires just a few simple ingredients.
Ingredients
- 4 eggs
- 1 fresh horseradish root (you can also use a jar of horseradish from a Polish deli)
- 2 tablespoons of mayonnaise
- 2 tablespoons of sour cream
- 1 teaspoon of mustard (optional)
- salt
- pepper
Grate fresh horseradish finely using a grater or process it in a food processor. Cook the eggs, then cool, peel, and grate them finely using a grater or add them to the horseradish in the food processor and pulse together for a while. Season to taste with pepper and salt and add mayonnaise, sour cream and a bit of mustard. Mix everything together.
Try some of the relish, adjust to your liking amounts of mustard, mayo and sour cream.
Ideal for cold meats and sandwiches. Easter Horseradish and Eggs Relish requires greens on top- I like them all: dill, parsley, sprouts (I had broccoli sprouts), basil, chives, whatever you prefer.
How to use Easter Horseradish and Eggs Relish
- with cold cuts
- as a bread spread on sandwiches
- as a filling to Schab po warszawsku- Warsaw Style Pork Loin, which is another delicious Easter dish, you need to try!
- you can stuff your Easter eggs with this filling.
