Traditional Recipe for Orzeszki Cookies
Orzeszki Cookies are delicious Polish treats, shaped like walnuts . They are filled with creamy filling made of powdered milk, cocoa with addition of chopped walnuts. They are one of the most cherished childhood memories for many Poles. To make them you need special molds, that can be found online. Here’s a tried-and-true recipe for traditional Orzeszki Cookies.

Ingredients for the dough:
- 250 g cold butter
- 500 g all-purpose flour
- 2 egg yolks
- 1 tablespoon sour cream
- 50 g powdered sugar
- 1 teaspoon baking powder
Ingredients for the filling:
- 200 g powdered milk
- 2 tablespoons cocoa powder
- 100 g soft butter
- 100 g powdered sugar
- 100 g finely chopped walnuts
Instructions:
- Dough:
- In a large bowl, mix the flour with baking powder and powdered sugar.
- Add the cold butter, cut into cubes, egg yolks, and sour cream. Knead into a smooth dough. Shape into a ball, wrap in plastic wrap, and chill in the refrigerator for about 30 minutes.
- Shaping the “shells”:
- Prepare walnut-shaped molds (metal or silicone). You can lightly grease them with a bit of butter to prevent sticking.
- Take small portions of the dough and press them into the molds to form thin walnut shell shapes.
- Bake at 180°C (356°F) for 8-10 minutes until golden. Let them cool and carefully remove from the molds.
- Filling:
- In a mixing bowl, whip the soft butter until fluffy.
- Gradually add the powdered sugar, powdered milk, and cocoa powder. Mix until the ingredients are fully combined and the filling is smooth. Add chopped walnuts. For an enhanced flavor, you can add a few drops of vanilla extract.
- Assembling the Orzeszki Cookies:
- Fill each shell with a portion of the filling and stick two halves together to form a whole “walnut.”
- The finished cookies can be dusted with powdered sugar or rolled in finely chopped nuts, but I like them simple.
Tips:
- Orzeszki Cookies taste best after a few hours when the dough softens slightly from the filling.
- Walnut-shaped molds can be found in kitchen supply stores or ordered online.
