Every Easter, our family gathers to prepare a spread of delicious traditional dishes. Along with this Fish Pickled in Vinegar, we also make Vegetable Salad, Ćwikła (beet salad with horseradish), and Stuffed Eggs. These dishes bring back warm memories of past celebrations and create a table full of love and flavor.

Today, I’m sharing my recipe for Fish Pickled in Vinegar. I usually use trout because of its delicate flavor, but any fish will work well, or you can mix different types to create your own unique combination.

Ingredients and Tools

  • For the Fish:
    • 1 kg fresh fish (I prefer trout, but feel free to mix types)
    • Salt
    • Flour
    • Oil for frying
  • For the Vinegar Marinade:
    • 3 cups water
    • 1 cup vinegar
    • 6 peppercorns
    • 6 allspice berries
    • 3 bay leaves
    • 1 teaspoon salt
    • 2 teaspoons sugar
    • 1 medium onion, sliced into rounds
  • Tools You’ll Need:
    • A heavy frying pan
    • A saucepan for the marinade
    • Clean glass jars with lids for storing the fish

Instructions

1. Preparing the Fish

  • Clean and Trim: remove the scales from the fish and wash it well. Cut off the head, tail, and fins to tidy the fish.
  • Slice the Fish: cut the fish into round pieces (known as “dzwonka”).
  • Season and Flour: sprinkle the fish pieces with a little salt, then lightly coat them in flour.
  • Fry the Fish: heat oil in a pan and fry the fish until both sides are golden brown.

2. Making the Vinegar Marinade

  • Mix Liquids and Spices: in a pot, combine 3 cups of water and 1 cup of vinegar. Add 6 peppercorns, 6 allspice berries, 3 bay leaves, 1 teaspoon salt, 2 teaspoons sugar, and the sliced onion.
  • Boil: bring the mixture to a boil and let it cook for about 5 minutes. This step helps the flavors merge together.

3. Assembling and Storing

  • Fill the Jars: place the fried fish pieces carefully into clean glass jars.
  • Pour the Marinade: while the marinade is still hot, pour it over the fish in the jars. Make sure the spices and onion slices are evenly distributed.
  • Seal and Store: seal the jars tightly. When stored properly, this vinegar fish can last for several months—a perfect dish to prepare ahead for Easter.
  • Fish Pickled in Vinegar is ready after 2 days of marinading.

A: Absolutely! While I prefer trout, you can use any fresh fish you like. You can even try a mix of different types to add extra variety.
