Homemade Raspberry Syrup – A Taste of Polish Tradition

There’s nothing quite like Homemade Raspberry Syrup. Sweet, fragrant, and full of summer flavor, it’s one of those pantry treasures that make winter so much brighter. In Poland, many families keep bottles of raspberry syrup ready for tea, pancakes, or even semolina pudding (kasza manna) – just like my Grandma Emilka used to do.

This time I made it with late-summer raspberries, which are especially sweet and still plentiful in early autumn. The process is simple, and the reward is a beautiful, ruby-red syrup that feels like sunshine in a jar.

Ingredients:

  • 2 kg (about 4.5 lbs) fresh raspberries
  • 2 cups sugar (you can mix white and cane sugar if you like)

Instructions:

  1. Prepare the raspberries. Rinse the berries gently and place them in a large pot. Sprinkle with sugar.
  2. Let them release their juice. Set the pot aside for 2–3 hours. The raspberries will soften and release their juices.
  3. Cook the mixture. Place the pot over medium heat, bring to a boil, and cook until the sugar dissolves completely.
  4. Strain the syrup. Pour the mixture through a fine sieve to separate the juice from the fruit pulp. Let it drip for a while so all the liquid comes through.
  5. Boil once more. Return the clear syrup to the pot, bring it back to a boil, then immediately pour into sterilized jars or bottles.
  6. Seal the jars. Close tightly and turn upside down to ensure a good seal. This method is usually enough, but if you prefer, you can pasteurize the jars using your favorite canning method for extra safety.

How to Use Homemade Raspberry Syrup

  • Add a spoonful to hot tea on a cold winter’s day – it’s warming, soothing, and perfect for when you feel a little under the weather.
  • Pour over semolina pudding (kasza manna) or rice pudding, just the way Babcia Emilka did.
  • Drizzle on pancakes, waffles, or ice cream for a fruity touch.

Making raspberry syrup at home is simple, but it feels incredibly special. Every jar is a little reminder of summer, waiting to brighten those long winter evenings.
