Crunchy Cauliflower Salad – Modern Polish cooking

Ingredients
- 1 small cauliflower, divided into florets
- 1 carrot, grated on a coarse grater
- 1 small onion, finely chopped
- 2 tablespoons chopped fresh parsley
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon lemon juice
- 1 teaspoon honey
- salt and pepper to taste
Preparation
- Divide the cauliflower into florets, wash carefully and grate on a coarse grater.
- Peel the carrot, wash it and grate on a coarse grater.
- Finally chop one small onion. You may use a regular onion or a shallot.
- In a large bowl, combine grated cauliflower and carrot, chopped onion, and chopped parsley.
- In a small bowl, mix together the mayonnaise, sour cream, lemon juice, and honey. Season with salt and pepper to taste.
- Pour the dressing over the vegetables and mix well to ensure all ingredients are evenly coated.
- Refrigerate the Crunchy Cauliflower Salad for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad another stir and check if it needs additional salt or pepper.
