Creamy Rice Pudding with Strawberries – A Taste of Childhood

Some desserts aren’t just about flavor — they carry memories, emotions, and the warmth of home. This creamy rice pudding with strawberries was one of those special treats in my childhood. Served warm or chilled, it felt like a hug in a bowl, something that made ordinary afternoons feel festive.

In many Polish homes, desserts like this one didn’t require a celebration — they were simple, nourishing, and comforting. I remember helping in the kitchen, stirring the rice as it gently bubbled away on the stove, and mashing sweet strawberries with a fork until they released their beautiful ruby juice.

This dish is soft, creamy, and full of summer flavor. It’s perfect when strawberries are in season — juicy, ripe, and fragrant.

Creamy Rice Pudding with Strawberries

Ingredients:

  • 1 cup sticky rice (e.g. arborio)
  • 1 cup water
  • 1/2 cup milk
  • 1/2 cup cream (or more milk if preferred)
  • A pinch of salt
  • 1 tbsp sugar (or to taste)
  • Fresh strawberries
  • Optional: blueberries for decoration

Instructions:

  1. Rinse the rice and place it in a saucepan with 1 cup of water. Add a pinch of salt. Bring to a boil, then lower the heat and simmer until the water is mostly absorbed.
  2. Stir in the milk and cream. Cook over low heat, stirring often, until the rice becomes soft and creamy. Add more milk if needed for a looser consistency.
  3. Sweeten with sugar to taste.
  4. While the rice cooks, mash some strawberries with a fork — you want them juicy, not puréed.
  5. Serve the warm or cooled rice pudding with mashed strawberries on top. Garnish with fresh strawberry slices and a few blueberries if you like.
