Strawberry Cloud Cake

Strawberry Cloud Cake is a popular cake in today’s Poland, you can find recipe on each and every cooking blog. Actually originally this is ‘raspberry cloud’ cake, but I made my cake with strawberry. You can also make blueberry version or cherry one, this is up to your likes and what you have in your freezer. Yes, you can use frozen fruits or seasonal fruits- of course that’s better option.

Strawberry cloud is a delicious cake- buttery shortcrust is covered with strawberry jello with strawberries in it. On top goes vanilla cream and mascarpone finished with crispy meringue. Quite of lot of preparation, but with proper organization you’d be fine. Strawberry cloud cake need refrigerating, you need to make a day before and chill in the fridge overnight. I love the flavor of Polish Apple Crumble – Szarlotka in my house – buttery, with a bit of cinnamon. My children love it too, so I make it quite often.

As long as it is Autumn, I try to make the best of it, apples are now the freshest and the cheapest in the whole year.

Apple and Custard Shortcrust

Apple and vanilla custard shortcrust is a kind of Polish Szarlotka, an extra layer of custard makes this pie smell like vanilla, it’s creamy and sweet. I used Polish >budyń<, which is a very popular dessert in Poland, available to buy in instant version. All you need to do is bring milk do boil, and mix in a mixture of budyń powder dissolved in a small amount of cold milk. Budyń may be served warm or hot, alone or with raspberry juice and berries. You don’t have to be worry, if there is no budyń in your convenient store, you can make it yourself and it’s easy too.

Murzynek Polish Chocolate Cake

Classic Polish Chocolate cake is easy and delicious. Moist and fluffy, delicate, with perfect amount of cocoa and sweetness. Classic Murzynek Polish Chocolate cake was the first cake I have baked myself:) It was so popular during PRL and still is now. My children love this cake, they love to bake it themselves, my son even choose it as his birthday cake. Try this traditional recipe, Polish chocolate cake would suit well on Easter table, if you prefer to keep it simple but delicious.

Polish Apple Pie – Szarlotka

Polish Apple Pie/ Polish Apple Crumb Pie – Szarlotka is one of the most popular desserts in Polish families and in cafes in Poland. Can be served cold or warm, with a scoop of vanilla ice cream and a whipped cream.

This a a recipe of my mother, with one difference: she always topped the pie with meringue.

Cinnamon, taste of butter and a sourness of apples makes Szarlotka a perfect dessert:)
