Racuchy Drożdżowe z Jabłkami

Ingredients:
- 300 (2 and half cups) all-purpose flour
- 30g fresh yeast or 7g (1 packet) dry yeast
- 250ml (1 cup) warm milk
- 2 large eggs
- 4 tbsp sugar
- A pinch of salt
- 4 tbsp vegetable oil (plus more for frying)
- 2 medium apples, peeled and grated
- Optional: powdered sugar for dusting
Instructions:
- Prepare the Yeast Mixture:
- In a small bowl, dissolve the fresh yeast in warm milk with 1 tablespoon of sugar. Let it sit for 10 minutes until frothy. If using dry yeast, follow the package instructions.
- Make the Batter:
- In a large mixing bowl, combine flour, remaining sugar, and salt. Add the yeast mixture, eggs, and oil. Mix until a smooth batter forms. Fold in the grated apples.
- Let It Rise:
- Cover the bowl with a clean kitchen towel and let the batter rise in a warm place for 25 minutes. It don’t need to rise a lot, the dough will rise while frying anyway.
- Fry the Racuchy:
- Heat vegetable oil in a deep pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 2–3 minutes per side. Drain on paper towels.
- Serve:
- Dust the fritters with powdered sugar and serve warm. They’re delightful on their own or paired with a drizzle of honey.
