What is actually Zsiadłe Mleko?

Zsiadłe Mleko is a type of milk that has been acidified due to the lactofermentation which converts lactose (milk sugar) into lactic acid. Soured milk has a tangy taste and a thicker consistency compared to fresh milk. It’s a natural fermentation, you don’t need any stimulant or additives to make it.

Is Zsiadłe Mleko healthy?

Yes! It’s great for immune, it promotes proper bowel function and also stimulates the secretion of bile and digestive juices.

In Poland Zsiadłe Mleko has been very popular in the past, like 80ties, 90ties of the last century. Now it is also a loved milk drink, however it’s not as easy to get as for example buttermilk or kefir. It’s more popular seasonally, in Summer. I suppose it might be because the fact, that in the past Zsiadłe Mleko has usually been made at home, by housewives.

In my family it was Babcia Emilka, who prepared it. She would use fresh milk gifted by our neighbour, Mrs Leńcowa, who had a cow. My Grandma would pour all to the wide bottom pot and after a day or two we enjoyed fresh Zsiadłe Mleko. We all loved these dinners- there was a big plate with new potatoes in the middle of the table. Potatoes were sprinkled with bacon lardons and fresh dill. Each of us got a cup of Zsiadłe Mleko. We would spoon a potato from the shared plate, then fill the spoon up with Zsiadłe Mleko. Zsiadłe Mleko and potatoes reminds me of my childhood.

How to make Zsiadłe Mleko at home?

It’s really easy to make Zsiadłe Mleko. If it’s not available in the area, where you live, you can make it at home. All you need is milk. Not any milk, as most of the milk available at groceries is pasteurised, which means all the bad but also good bacteria is killed in the heating process. You need to get unpasteurized milk.

Transfer fresh milk to a wide bottom pot. Cover with a cloth. Place in a warm place and after 1 or 2 days you’d get this healthy and refreshing drink.

Serve with potatoes. The best are new potatoes, first of the season. Their skins are delicate and it’s enough to brush them before cooking. Boil them in salty water. New potatoes should be ready 20 minutes after they come to a boil. In a meantime prepare lardons. Dice bacon. and Heat the oil in a frying pan on a high heat, add the diced bacon and cook for 8-10 mins until browned. If you don’t eat meat, here is an alternative vegetarian option: dice onions and saute in butter or oil. Both versions are delicious!

Serve Zsiadłe Mleko with potatoes, sprinkled with lardons and freshly cut dill. Best Summer dish.
