Polish Zielonka Mushroom Broth

In Poland, Gąska Zielonka, Tricholoma equestre, known locally as zielonka, is a popular and legally approved wild mushroom. Mushroom lovers in the States and other English speaking countries may know this fungi as the man on horseback or yellow knight. In Poland it’s highly regarded by mushroom enthusiasts and often enjoyed pickled in vinegar. A regional specialty, particularly in the Kurpie region, is Polish Zielonka Mushroom Broth, known as Rosół z zielonek or Rosół z prośnianek (prośnianka is a regional name of Gąska Zielonka). This dish highlights the unique flavor of zielonka, which is one of the last mushrooms of the season, appearing just before winter.

Although I hadn’t found zielonka on my own yet, I was eager to try the soup, so I bought some at the farmers market and cooked Polish Zielonka Mushroom Broth myself. It was absolutely delicious!

Ingredients

  • 300 g fresh zielonka mushrooms (Tricholoma equestre), thoroughly cleaned
  • 2 pieces of chicken (such as drumsticks or thighs)
  • 1 carrot
  • 1 parsnip (or parsley root)
  • 1 small celery root
  • 1 leek (white part only)
  • 2 liters of water
  • 2 bay leaves
  • 3-4 allspice berries
  • salt and pepper to taste
  • fresh parsley for garnish

Preparation:

  1. Cleaning the mushrooms: Thoroughly clean the zielonka mushrooms by rinsing them multiple times in lightly salted water to remove sand and debris. Repeat until the water is clear, as these mushrooms often collect soil and pine needles.
  2. Preparing the broth: In a large pot, bring the water to a boil. Add the chicken pieces, carrot, parsnip, celery root, and leek, all peeled and cut into chunks. Add the bay leaves, allspice, and a pinch of salt. Simmer on low heat for about 30 minutes to let the flavors develop.
  3. Cooking the mushrooms: Add the cleaned zielonka mushrooms to the broth. Continue to simmer on low for an additional 30 minutes until the mushrooms are tender.
  4. Seasoning: Taste the soup and adjust seasoning with salt and pepper.
  5. Serving: Serve the hot broth garnished with fresh parsley and with mashed potatoes in a separate bowl. The best potatoes would be topped with crispy bacon bits:)
