Strawberry Knedle – A Taste of Polish Summer
Every Polish child love them, even though more popular are these filled with plum. As long as plum season is still to come, try Strawberry Knedle. Soft, slightly chewy dumplings filled with sweet, juicy strawberries. Served warm, coated in golden buttered breadcrumbs and sprinkled with sugar. If there was ever a way to capture summer on a plate – this is it. Let me show you how I make my knedle z truskawkami.

Ingredients:
- about 400 g of cold boiled potatoes (leftovers work great)
- 150 g of all-purpose flour
- 1 egg
- a pinch of salt
- 8 fresh strawberries (medium size)
- 2–3 tablespoons of butter
- 4 tablespoons of plain breadcrumbs
- sugar for sprinkling

Instructions:
- Start by pushing the cold potatoes through a potato ricer – they should be smooth and lump-free.
- Add the flour, egg, and a pinch of salt.
- Knead the dough quickly – just until everything comes together. Don’t overwork it.
- Roll the dough into a thick log and divide it into 8 equal parts. I do this the Polish way: first in half, then each half in half, and then once more – eight perfect pieces.
- Flatten each piece gently in your palm, place a strawberry in the center, and wrap the dough around it. Roll into a neat dumpling.
- Bring a large pot of salted water to a gentle boil. Drop in the knedle and cook until they float to the surface – then give them another 2–3 minutes.
- Meanwhile, melt butter in a pan and toast the breadcrumbs until golden and fragrant.
- Serve the knedle hot, topped with the buttered breadcrumbs and a generous sprinkle of sugar.
Optional (but deeply traditional in Łódź):
In Łódź, Strawberry Knedle are sometimes served with braised young cabbage. I know it sounds strange – sweet dumplings and cabbage? But trust me. The tangy, buttery cabbage balances the sweetness perfectly. I’ll be doing it this way again this year – a little nod to regional diversity.
