Homemade Vegetable Seasoning

In late 80ties new seasoning gain great popularity in Poland – a yellow universal seasoning I don’t want to refer to, because one of the main ingredients of it is monosodium glutamate, that is not healthy and which I don’t use. Instead I make my own dried Homemade Vegetable Seasoning.

Homemade Vegetable Seasoning

You can use it for:

Try this recipe for Homemade Vegetables Seasoning.

Ingredients

  • 200 g / 7 oz dried vegetables mixed: carrots, parsley/parsnip, onions, leek, celeriac
  • 1 teaspoon allspice berries
  • 2 bay leaves
  • 1 teaspoon pepper berries
  • handful dried mushrooms
  • 1 tablespoon dried lovage (lubczyk)
  • 1 teaspoon turmeric powder
  • half teaspoon dried garlic
  • 6 tablespoons salt

All you need to do is to blend all the ingredients together. Start with the biggest and hardest ones: dried vegetables, berries, bay leaves and dried mushrooms. Once they are blended, combine with the rest of the ingredients.

Transfer to the jar, close tightly. Homemade Vegetable Seasoning can be stored in a cool dry place for a year or even more time.

Notes:

You can dry vegetables on your own. Clean then, peel and cut them into slices, so that the process of drying was shorter. Dry in an air dryer or in the sun, in a warm airy place.

    Without going into great detail (except to say that the problem is not related to COVID), I now find myself struggling to add taste/flavor to my foods without overusing salt. I am so excited to try this.

    Please keep up the good work with your website. The detail you provide in your recipes is superb. Your photo layout is perfect (at least in my opinion). Applause for you!

    1. I prefer not to use it. I think if you use it, you become dumb (or numb;) to other flavors, you got accustomed to it and nothing tastes good without MSG.
      The link you sent is quite old- 2013. I don’t mind if someone uses, but I prefer not to use it in my kitchen.

    2. Unfortunately there are few studies out there without a thumb in them pushing them one way or another. Most of us aren’t scientists and aren’t physically present when an experiment is being done. Some people might have no noticeable reaction but I know many who do. I go out of my way to avoid it. People trying to avoid MSG should watch out for MSG code words like natural flavor/s, carageenan and others when checking ingredients. It can be very difficult to avoid even in otherwise healthy foods.
