Polish Easter Babka

This is a simple recipe for a Polish Easter Babka —a soft, egg-rich cake that is a must-have on the Easter table in Poland. It uses a lot of eggs and is light, fluffy, and perfect with a cup of tea or coffee.

Ingredients

  • 8 eggs (room temperature)
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a bundt pan or a loaf pan.
  2. In a large bowl, beat the eggs and sugar until the mixture is light and almost doubled in volume. This can take about 8-10 minutes using an electric mixer.
  3. Sift the flour and a pinch of salt over the egg mixture. Gently fold it in using a spatula. Be careful not to overmix; you want to keep the air in the batter. Add vanilla extract.
  4. Gradually add the melted butter while gently folding the mixture. Make sure the butter is not too hot, or it may cook the eggs.
  5. Pour the batter into your prepared pan. Bake in the preheated oven for about 35-45 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it as baking times can vary.
  6. Remove the babka from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
