Herring in Cream

Herring in Cream is an easy dish, by many Poles traditionally eaten on Fridays. My Grandma Emilka loved to have herring in cream simply with potatoes and this is how I often serve them. Unfortunately only for myself, my kids and husband don’t care much about herring at all:) Anyway I encourage you to try this dish at least once, maybe you’d fall in love with it, just like me.

Ingredients

  • 3 salted herring fillets
  • milk for soaking (about 1 cup)
  • 1 cup sour cream (or more, as you like)
  • 2 onions
  • 1 apple (optional)
  • salt and pepper
  • 2-3 tablespoons vinegar
  • 3 tablespoons chopped dill

Transfer salted herring fillets into a bowl with milk for 2 hours to soak out of salt. After that time rinse herring and dry fillets with paper towel. Cut them into smaller pieces, approximately one bite size.

Dice onions. You can blanche onions for a minute in hot water, if you don’t like strong onion taste. I don’t do that – after a day of marinating of the dish onions are soft and not so strong.

Grate apple on a big whole grater.

Put herrings, onion and grated apple in a bowl. Add cream, a little vinegar, season with salt and pepper, sprinkle with chopped dill. Mix everything well, but at the same time gently:)

Put the bowl in the fridge, as Herring in Cream is best on the next day. I like it served with boiled potatoes for dinner, it’s also so good served simply with bread for breakfast and supper. Herring in Cream can be a great party appetizer as well.

  • You can use pickled herring too- then you don’t need to soak herring in milk. Adding vinegar is not necessary in this case.
