This is a simple recipe for a Polish Easter Babka —a soft, egg-rich cake that is a must-have on the Easter table in Poland. It uses a lot of eggs and is light, fluffy, and perfect with a cup of tea or coffee.

Ingredients
- 8 eggs (room temperature)
- 1 cup sugar
- 1 cup all-purpose flour
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- a pinch of salt
Instructions
- Preheat your oven to 350°F (180°C). Grease a bundt pan or a loaf pan.
- In a large bowl, beat the eggs and sugar until the mixture is light and almost doubled in volume. This can take about 8-10 minutes using an electric mixer.
- Sift the flour and a pinch of salt over the egg mixture. Gently fold it in using a spatula. Be careful not to overmix; you want to keep the air in the batter. Add vanilla extract.
- Gradually add the melted butter while gently folding the mixture. Make sure the butter is not too hot, or it may cook the eggs.
- Pour the batter into your prepared pan. Bake in the preheated oven for about 35-45 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it as baking times can vary.
- Remove the babka from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
