Polish Easter Babka

This is a simple recipe for a Polish Easter Babka —a soft, egg-rich cake that is a must-have on the Easter table in Poland. It uses a lot of eggs and is light, fluffy, and perfect with a cup of tea or coffee.

Ingredients

  • 4 eggs (room temperature)
  • 1 cup sugar
  • 1 cup all-purpose flour
  • half cup potato starch
  • 150 g butter (soft)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a bundt pan or a loaf pan.
  2. In a bowl, combine all-purpose flour, potato starch, and baking powder. Add salt. Set aside.
  3. In a separate large bowl, beat the butter with sugar until light and fluffy.
  4. Add the eggs to the creamed butter one by one, mixing well after each addition. Add vanilla extract.
  5. Pour the batter into your prepared pan. Bake in the preheated oven for about 35-45 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it as baking times can vary.
  6. Remove the babka from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

  1. I made it. Total disaster. Followed the instructions exactly? Hard and gluey in the pan . No baking powder or baking soda? Wasted a lot of good ingredients on this . Major diappointment. At the price of eggs?
