This is a simple recipe for a Polish Easter Babka —a soft, egg-rich cake that is a must-have on the Easter table in Poland. It uses a lot of eggs and is light, fluffy, and perfect with a cup of tea or coffee.

Ingredients
- 4 eggs (room temperature)
- 1 cup sugar
- 1 cup all-purpose flour
- half cup potato starch
- 150 g butter (soft)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- a pinch of salt
Instructions
- Preheat your oven to 350°F (180°C). Grease a bundt pan or a loaf pan.
- In a bowl, combine all-purpose flour, potato starch, and baking powder. Add salt. Set aside.
- In a separate large bowl, beat the butter with sugar until light and fluffy.
- Add the eggs to the creamed butter one by one, mixing well after each addition. Add vanilla extract.
- Pour the batter into your prepared pan. Bake in the preheated oven for about 35-45 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on it as baking times can vary.
- Remove the babka from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
