Pasztet z mięsa z rosołu
Zero Waste Pate, just like my Mom and Grandma have been making throughout my whole childhood. They knew how to use everything wisely, so we’re using leftover meat and veggies from Rosół to make a tasty pasztet. Nothing goes to waste here! It’s about honoring tradition and making the most of what we have. Let’s cook up a pasztet that’s delicious and clever, just like our Grandmas used to make!
Meat left from Rosół cooking may not be the tastiest, as most of the flavor was left in the soup, so we need to add a lot of spices and one secret ingredient, that makes a difference:) All right, let’s not keep it a secret any more- it’s butter 😀 I don’t know how about you, but I hate headlines saying: “add this one secret ingredient and you won’t believe the result, you wont make this dish any other way” and I never open this kind of links, haha:)
Ingredients:
- 700g meat from broth (such as chicken, beef, or pork)
- veggies cooked in Rosół, for example: 2 carrots, 1 parsley, part of celeriac.
- 100g softened butter
- 1 onion, roughly chopped
- 2 cloves of garlic
- 1 egg
- 1 tablespoon favorite herbs (thyme, oregano, marjoram)
- teaspoon paprika powder
- a stale bread roll soaked in half cup of milk or: 4 tablespoons breadcrumbs
- 1/2 cup milk
- Salt and pepper to taste
Instructions
Preheat the oven to 180°C.
Grind the meat from the broth, cooked veggies, chopped onion and garlic in a meat grinder.
Add the softened butter, an egg, soaked bread roll or add breadcrumbs to the ground meat mixture. Season with salt and pepper, a teaspoon of paprika powder and favorite herbs, like: oregano, thyme, marjoram (about a tablespoon altogether).
Mix all the ingredients thoroughly until you get a smooth consistency. If it’s too liquid add more breadcrumbs. Transfer the mixture to the greased baking dish. Bake the pasztet in the preheated oven for about 45-50 minutes, until golden brown on top.
Once baked, remove the pasztet from the oven and let it cool.
After cooling, slice the pasztet and serve with your favorite accompaniments or marinades. This Zero waste Pate is easily spreadable as well, I love it with bread and butter and a big slice of tomato on top.
