Lazy Kluski – Leniwe – Just Like at the Milk Bar… but Better
If you grew up in a Polish household – or ever stepped into a milk bar (bar mleczny) in Warsaw or Kraków – you probably know kluski leniwe .
Despite the name (“lazy kluski”), there’s nothing lazy about the taste. They’re soft, pillowy dumplings made with farmer’s cheese, and usually drowned in melted butter, breadcrumbs, and maybe a splash of cream. The ultimate comfort food. The food of childhood.
These were made with real Polish twaróg (farmer’s cheese), buttery breadcrumbs, and thick 30% sweet cream. This time, I added stewed blueberries and fresh raspberries on top. Pure heaven. Absolute childhood vacation vibes.

Ingredients
- 500 g (about 1 lb) full-fat farmer’s cheese (tłusty twaróg)
- 2 egg yolks & 2 egg whites (beaten stiff)
- 2 tablespoons all-purpose flour
- Pinch of salt
To serve:
- Melted butter with toasted breadcrumbs (bułka tarta w maśle)
- 30% sweet cream (or heavy cream)
- Optional: stewed blueberries and fresh raspberries

Instructions
- Press the cheese through a potato ricer or mash it very well.
- Add egg yolks, flour, and salt. Mix into a soft dough.
- In a separate bowl, beat the egg whites until stiff, then gently fold into the dough.
- Lightly flour your counter. Roll the dough into logs about 1 inch thick.
- Using a knife, cut diagonally into small diamond-shaped pieces.
- Bring a large pot of salted water to a gentle boil (don’t let it bubble too hard).
- Drop in the kluski. Once they float, cook for 1 more minute.
- Remove with a slotted spoon and serve immediately.

- My twist: add warm stewed blueberries and top with fresh raspberries – trust me, it’s magic.
