I have been mastering this recipe for few months🤩 Now I can share the recipe for delicious Chicken De Volaille, known also as Chicken Kyiv. These cutlets, chicken rolls actually, are known in many Eastern European countries. The basic recipe includes just butter and dill inside.

For two Chicken De Volaille:
Ingredients

  2 single chicken fillets
  bunch dill
  30 g / 1 oz butter
  3 tablespoons flour
  cup breadcrumbs
  2 eggs
  salt and pepper
  4 cups frying oil – I use canola oil

  First – prepare butter: cut it into 2 equal sticks and place in a freezer for the time of meat preparation.

2. Clean meat and wipe it with a paper towel. Cut each fillet long wise starting from the thinner side, but you don’t want to cut it into two parts, cut it in half but not all the way through (I heard a term: butterflying for this, which actually appeals to the imagination). Open the meat, cover it with a foil for pounding, you don’t want to make wholes in meat. Pound the meat really thinly, specially at the boarders. Season the fillet with salt and pepper.

3. Take butter from the freezer and place one piece of butter and few sprigs of dill on the the fillet.

4. Fold the bottom and sides of fillet over butter and dill and start rolling (for me it is exactly the same method as for gołąbki). Butter should be closed tightly inside, so that it stayed inside while frying. That is actually the most important test for De Volaille – the butter should only be poured out after cutting while serving:)

5. If you have some spare time, you can put cutlets in the fridge for half an hour. Or go to the next step: heat frying oil in a saucepan.

6. Coat cutlet thoroughly in flour, put it in the egg wash, then coat generously in breadcrumbs. When the oil is hot (about 350 F / 180 C) fry cutlets for 8-10 minutes. Check temperature, so that they didn’t get burn, flip them every several minutes.

7. Transfer to the plate once they are golden brown, pat with paper towel to soak excess fat. Serve after few minutes of resting.

Fried Cauliflower - it's a really nice snack I mad Fried Cauliflower - it's a really nice snack I made yesterday. I got not really fresh cauliflower (my husband keeps whining that I buy something and then it's kept in the fridge for ages;)). That was exactly this case🤪🤣 
Cauliflower was not good for salads, but steamed and then fried in breadcrumbs made it really tasty🤩

Ingredients

  cauliflower divided into florets halves
  egg
  bread crumbs
  salt& pepper

Steam cauliflower till it is al dente and cool.

Put cauliflowers in beaten egg wash, then toss in bread crumbs and place on a pan with hot oil/butter. Season with salt and pepper. Fry for 2 minutes on each side till crispy.

I make stewed pork chops every couple of weeks, ea I make stewed pork chops every couple of weeks, each time I don’t have time or just not feel like cooking each day. I make a bulk portion of simmer pork chops and my family is happy with it, specially once I serve it with Kopytka – diagonal shaped potato dumplings.

Ingredients

  1 kg/2,2 lb pork loin
  3 medium onions
  1 carrot
  1 parsley
  flour for tossing
  3 allspice
  3 bay leaves
  salt, pepper
  rapeseed oil for frying
  dill

Cut meat into cutlets, salt them, toss in flour and fry for few seconds on each side. Place them in the pot, add allspice, bay leaves, season with salt and pepper.

Saute chopped onions, season with salt, add to the pot.

Peel and dice parsley and carrot, add them to the pot.

Pour water so that cutlets were almost covered and simmer for an hour. Check every several minutes not to get it burn.

If you want thicker sauce, you can add a tablespoon of flour mixed in water at the end of cooking, bring to boil and turn off the fire.

Chop dill for serving.

Serve stewed pork chops with kopytka, rice, barley or potatoes and favorite Polish slaws, mine is mizeria🙂
Apple Racuchy are one of the favorite Polish suppe Apple Racuchy are one of the favorite Polish suppers. Children love them and they are simple and easy to make. I don’t add sugar inside, so you can keep them low caloric or sprinkle Racuchy with lots of powder sugar. My Racuchy are crispy and fluffy, even though I don’t use yeast nor baking powder – are you ready to find out what is the secret of my perfect Racuchy: fluffy, crispy and tender inside? 🙂

Ingredients:

  2 cups milk
  2 cups flour
  2 eggs
  3 apples
  salt
  powder sugar
  oil for frying

Separate egg whites from the yolks.

Combine flour with milk and 2 yolks in a bowl. Sprinkle with a pinch of salt. Beat ingredients with electric mixer till the batter is creamy. It should be quite thick. You can lightly adjust milk and flour amounts, if you think the dough is too thin or too thick (compare with the picture no 3 below).

Peel apples. I cut them in hand into small irregular pieces. They should be more less the same and rather flat, so that the pancakes were easy to fry. Mix apples with the dough.

In another bowl beat the egg whites till stiff. Add them gently to the dough with a spoon. The dough has to be thick at the beginning, as it gets thinner at this stage. This is actually the secret of the recipe. Beaten whites make the batter delicate and fluffy without adding baking powder, soda nor yeast:)

Start frying straight away.

Heat the frying pan, drop the batter by large spoonful into the medium hot oil and fry for 3-4 minutes on each side till golden. Don’t make the oil too hot, give more time for Racuchy, so that they were the best.

Finally I managed to make vegetarian Fasolka po br Finally I managed to make vegetarian Fasolka po bretońsku, beans in delicious tomato sauce. I like it with a slice of toasted bread and a bit of butter on it. 
Classic Polish Breton Beans are made with kielbasa, this time I just skipped it for a lighter version of this dish.

Ingredients:

  2 cups all purpose flour (260 g)
 200 ml plain neutral yogurt
  1 cup sugar
  2 teaspoons baking powder
  3 eggs
  200 ml neutral oil (like rapeseed, canola oil)
 20 plums
  1 tablespoon butter
  2 tablespoons breadcrumbs

Preheat the oven to 180 C (356 F).

Clean plums, cut in halves long wise and remove the stones.

Place flour, yogurt, sugar, baking powder, eggs and oil in a bowl and mix well.

Prepare round baking dish about 22 cm (9 in) diameter. Brush it with butter and sprinkle with breadcrumbs. Transfer the dough to the baking pan, smooth the surface. Assemble plum halves with a skin down.

Bake for 50 minutes.

You can sprinkle yogurt plum cake with powdered sugar. It may be needed when the plums are not too sweet.
