Herb Butter is a great idea for serve it with bread, potatoes, grilled meats, fish, or vegetables. I am experimenting with both herbs I use and dishes I am enriching with herb butter. A lot of space for imagination! Below I share few pictures of the dishes I made with Herb Butter.

I try to learn new wild plants and herbs all the time and use them in my cooking. This time a plant with a delicate garlic smell and taste – garlic mustard, in Polish – czosnaczek. Early spring is the perfect time to pick it and use it in the kitchen. Wild plants have many benefits for health (they are not cultivated on a mass scale, rather they know how to cope in difficult conditions, when most people try to get rid of them from their plots and gardens) and for the pocket – they are free of charge. One thing to remember is to pick them away from highways.

The other very important rule is not to pick plants you are not 100% sure what they are, it might be dangerous! you can use herbs such as basil, parsley, chives, garlic, dill, or combine some of each in your butter.

Herb Butter - Garlic Mustard Butter
Herb Butter
Ingredients
  • 200 g butter (at room temperature)
  • big bunch of garlic mustard (or some of: basil, dill, parsley, chives, garlic)
  • salt and pepper to taste
Instructions
  1. Clean herbs thoroughly. Roughly chop young plants as a whole, for older ones- use only more delicate leaves.
  2. In a mixing bowl, place garlic mustard, season with half teaspoon of salt (if your butter is salted, add much less salt). Mix thoroughly until you get a smooth herb paste. Season with a bit of black pepper.
  3. Chop butter into few sticks. Add to the mixing bowl. Mix few seconds more until all the ingredients are evenly incorporated.
  4. Place the herb butter onto a sheet of parchment paper or plastic wrap. Shape it into a log or any desired form. I like to place my herbal butter in a jar, that I can close and place in the fridge.
  5. Once chilled, the Herb Butter is ready to use. You can serve it with bread, potatoes, grilled meats, fish, or vegetables.

In Poland recently got very popular a yeast bread baked with herb butter. Worth trying! I also made Herb Butter baguettes, which were great. Adding a bit of Herb Butter to frying, for example to reheat cooked potatoes, is another thing to try! Below my pictures of these dishes.
