Potato Stuffed Cabbage Rolls

There is quite a lot of work with Potato Stuffed Cabbage Rolls preparation, but the taste is so good, that you need to check it out. The recipe comes from the eastern borderlands, I found information that they were cooked in Lviv, which is a territory of today’s Ukraine.

Potato Stuffed Cabbage Rolls served

Ingredients

  • cabbage head
  • 1 kg / 2 and half lb potatoes
  • 2 onions
  • 2 eggs
  • 1 heaping tablespoon potato flour (can be substituted with corn starch or wheat flour)
  • 2 teaspoons salt
  • half teaspoon pepper
  • teaspoon marjoram
  • nutmeg
  • 4 cups vegetable broth
  • 3 cups tomato puree

Core cabbage and place it in a pot with boiling water. After 10 minutes check if leaves loose up and take them out one at a time every few minutes. Cabbage leaves should be fork tender.

Peel potatoes and grate them on small wholes grater or in a food processor. Drain the excess liquid with a spoon. Add eggs, potato starch and seasonings: salt, pepper, marjoram and nutmeg.

Peel onions, chop them and saute in a frying pan with few tablespoons of neutral oil (I use rapeseed oil). Add it to the potato mixture, combine all well.

Take one leaf of cabbage, cut stingy tough seam of cabbage. Place a portion of potato dough in the center, fold in the sides and roll up the cabbage. Place in a pot with a seam side down. Continue till you run out off cabbage leaves or/and potato filling.

Place gołąbki in the pot, top up with a broth, bring to boil and simmer for 50 minutes.

I serve potato stuffed cabbage rolls with tomato sauce: place tomato puree in a sauce pan, add a cup of broth, season with salt, pepper, dried garlic, onion and paprika, simmer till it gets thick.

The other option is to have potato stuffed cabbage rolls with mushroom sauce: dice mushrooms and onion. Saute them (separately) in a sauce pan with some oil. Combine them in a sauce pan, season with salt and pepper. Pour in cream (30% or 36%), turn heating on low and let it thicken. For extra flavors add 4 tablespoons of water from cucumbers pickled in brine.
